Cold Carrot Soup

Recipe 38 - August 5, 2012

Success!

This recipe comes from cooks.com

This soup is nice and refreshing.  It's pretty basic and quick and easy.  Maybe a little boring, but good.  I will work with the recipe and try different variations.

Parsi-Style Vegetable Stew

Recipe 12 - February 1st, 2012

Success!

This recipe comes from Food and Wine, March 2011
Chef: Sanjeev Kapoor

Quick and easy and tasty!  The added sugar and Worcestershire sauce add a nice variation.  I don't usually like sweet potatoes either and they are really nice in this recipe.  The servings are hearty, we got about 5-6 servings from this recipe.  Great winter recipe!

Mushroom and Root Vegetable Potpie

Recipe 8 - January 22nd, 2012

Success, but not a keeper.

This recipe comes from Cooking Light, March 2011
Chef: Jeanne Kelley

It was fun to use parsnips and rutabaga.  And all of my ramekins in multiple shapes and sizes.  The end result was really nice.  I'm a bit of a traditionalist and like my potpie with more of a pastry crust, not the crumble in this recipe.  The filling is really good.  But overall the amount of preparation and cooking time, plus multiple steps did not make this recipe worth repeating.
