Yum!  This was a really nice salad with a little kick thanks to the chipotle!  It will be great to have during the summer fresh off the grill.  It has a nice cold salad, light taste.  The portions were good and the cooking time is perfect.  It is also super easy and quick to prepare!

Pan-Fried Flounder with Poblano-Corn Relish

This is a horrible picture of a really nice dish.  I found out that my local Safeway mis-labels Poblano peppers and luckily I decided to buy the one that looked most like a poblano and was lucky that it was mis-labled.  

I used cod instead of flounder because I can not find flounder here.  The serving sizes were just right and the cooking times were right on.  It is a really nice dish!

Yum!  This recipe is easy and delicious!  One review suggests adding more peppers for more heat.  It has a mild to medium heat straight from the recipe.  It is a great recipe for a cold winter evening.  Or when you have a tex-mex craving.  I worked straight from the recipe.  It took longer because I chopped the veggies myself.  The servings are generous and we have leftovers.  I'm excited for lunch tomorrow!
